Beef Tatare
Ingredients:
• 300 g beef (fillet or sirloin)
• 7 caper, finely chopped
• 1 gherkin, finely chopped
• 2 tsp. parsley, chopped
• 1 shallot approx. 30 g, finely chopped and parboiled
• 2 anchovy fillets
• 15 g mustard
• 1 clove of garlic, finely chopped
• 15 g tomato ketchup
• Salt, pepper, cognac - optional
• 1 egg yolk
Preparation:
Chop the beef finely. Mix the chopped beef with the remaining ingredients and add salt and pepper to taste. Add a dash of cognac if you like.
Presentation:
Make small balls from the tartar and serve with toasted slices of white bread.
